A dish with classic flavors and one which is supremealy easy to cook as well. Chicken and rice is always a favorite combination in our house. Using chicken breasts keeps the meat so juicy and makes perfect leftovers too. With just a few classic Asian ingredients – ginger, garlic, mushrooms, and soy sauce, it gives this dish a unique twist and amazing flavor combination.

Instructions

Step 1: Marinate Chicken

In a medium bowl, combine the chicken, ½ the Soy Sauce, ½ the olive oil provided and corn flour.

Step 2: Cook the Chicken

Add remaining olive oil to a deep skillet on high. Add the chicken and cook for 5-7 minutes, until golden brown on both sides. Scoop out the chicken and set aside in a bowl.

Step 3: Sautee the onions

In the same skillet, add the onion, season with salt and cook on medium-low heat for 2 minutes, until slightly softened

Step 4: Add Peppercorns

Add Peppercorns at this stage.

Step 5: Blend the liquid mix

Blend the mix using a hand blender.

Step 6: Add Olive Oil

Slowly drizzle in the olive oil while the blender is on.

Step 7: Crumble the Goat Cheese

Bust up the Cheese using a fork to get finer pieces for your salad.

Step 8: Prepare the salad

Throw some spring greens into a large bowl.

Step 9: Toss other ingredients

Toss Cherries and Goat Cheese into the mix.

Step 10: Add Pistachios

Just Add Pistachios

Step 11: Drizzle with the dressing

And right before serving, drizzle with a few spoonfuls of the pomegranate honey dressing or add a sinful portion to quench your tangy tongue.
