Quinoa, hailed as "Food of the Gods" and "Gold of the Incas" is a complete protein. No wonder it is celebrated as a super food.... high protein, high fiber, hi iron. In fact no other vegetarian source can match the protein content of Quinoa. This recipe brings three civilizations together.... the Incas (quinoa), the Greek civilization (feta cheese) and the modern world (red peppers). The light taste and crunch of Quinoa is complimented by soft n sweet red peppers & rich n salty feta cheese.

Ingredients
Quinoa Feta Cheese Black Peppercorns Red Bell Pepper
Olive Oil Garlic Parsley Lemon Juice

Olive Oil 30 ml
Honey 60 ml
Pomegranate Juice 60 ml
Lemon Juice 30 ml
Cherry 100 gms
Lettuce 2 Cups
Pistachio 30 gms
Goat Cheese 30 gms

Instructions

Step 1: Cook the Quinoa

Soak the Quinoa in water for about 2 hours. Cook in boiling water (just as you would cook rice).Once cooked (would take about 20 minutes) drain off the excess water & allow the quinoa to cool

Step 2: Prepare the Peppers

Apply a few drops of oil to the red pepper and place in hot oven in a tray & cook for about 15 minutes or till it gets dark brown spots on skin. In case you do not have an oven, roast them directly on slow fire. Remove in a bowl and cover with a cling wrap or with a tight fitting lid

Step 3: Cut the Peppers

After about 15 minutes, peel the skin of the peppers and remove the seeds. Preserve the juices of the peppers that may ooze out during roasting or peeling. Cut the Pepper in finger sized strips

Step 4: Add Peppercorns

Add Peppercorns at this stage.

Step 5: Blend the liquid mix

Blend the mix using a hand blender.

Step 6: Add Olive Oil

Slowly drizzle in the olive oil while the blender is on.

Step 7: Crumble the Goat Cheese

Bust up the Cheese using a fork to get finer pieces for your salad.

Step 8: Prepare the salad

Throw some spring greens into a large bowl.

Step 9: Toss other ingredients

Toss Cherries and Goat Cheese into the mix.

Step 10: Add Pistachios

Just Add Pistachios

Step 11: Drizzle with the dressing

And right before serving, drizzle with a few spoonfuls of the pomegranate honey dressing or add a sinful portion to quench your tangy tongue.
